4-ingredient banana pancakes (gf, df)

Ingredients

  • 2 ripe bananas

  • 2 large pasture-raised eggs

  • 6 tbsp of organic brown rice flour or buckwheat flour

  • 1 tsp of pure vanilla extract, optional

  • 1/2 of teaspoon ground cinnamon, optional

  • 1 pinch of sea salt

  • coconut oil, for cooking

Instructions

  1. In a small mixing bowl, mash the ripe bananas until smooth.

  2. Add the eggs, vanilla extract, brown rice flour (or buckwheat flour), ground cinnamon, and pinch of sea salt to the bowl with the mashed banana.

  3. Mix all the ingredients together until you have a smooth batter.

  4. Heat a skillet over medium heat and add a small amount of coconut oil to coat the surface.

  5. Pour a small amount of the pancake batter onto the skillet and cook until bubbles form, about 1-2 minutes. Flip and cook until golden on the other side.

  6. Repeat the process with the remaining batter, adding more coconut oil to the skillet as needed.

  7. Serve the pancakes warm with your favorite toppings, such as fresh fruit, maple syrup, or coconut yogurt.
